Diego Briones
Owner + Head Chef

Diego is from Chile but has been cooking around the world for the past 15 years. His time in Chile, Peru, Canada, Spain, China, the Philippines, and France has shaped his culinary curiosity and sparked his joy in fusing various flavors and textures.

At the renowned Basque Culinary Center in San Sebastián, he refined his skills in new techniques, allowing him to consistently present innovative and surprising creations on the plate.

Diego loves to explore the different facettes of aromas, textures and ingredients, always staying true to his latinamerican guiding theme of pure flavor, respect for the product and joy on the palate.

Judith Lergetporer
Owner + Restaurant Manager + Sommelière

Judith is originally from Tyrol and has been at home all over the world for the past 20 years: USA, Morocco, Spain, Germany, China, Japan, and France.

Professionally, Judith didn't start in the gastronomy industry, but the love for hospitality has always been in her heart. During her time in Paris, she fell in love with the world of wine and pursued training to become a sommelière.

Judith’s great passion is surprising her guests in wine pairings with unique grape varieties, small winemakers, and new growing regions.

The name says it all

Z'SOM stands for the spoken tyrolian dialect of "together" and expresses the value of togetherness, community, and sociability - our fundamental guiding principle that is reflected in all aspects of our restaurant.
